KIDS LUNCH BOX RECIPES IDEAS

PANEER TIKKA ROLL RECIPE:

PREP TIME: 1 HOUR
COOK TIME: 20 MINUTES
TOTAL TIME: 1 HOUR 20 MINUTES(APROPXIMATE)
SERVINGS: 4

Paneer tikka roll

PANEER TIKKA ROLL :
INGREDIENTS(FOR PANEER TIKKA):
¾ Cup curd / yogurt, thick
¼ Tsp turmeric
1 Tsp Kashmiri red chilly powder
¼ Tsp cumin powder
½ Tsp coriander powder
2 Tbsp.gram flour
¼ Tsp garam masala(OPTIONAL)
¼ Tsp dry mango powder/chat masala
1 Tsp olive oil
1 Tbsp. lemon juice(OPTIONAL)
½ Tsp ginger garlic paste
½ Onion petals
2-3 Cubes red/green capsicum
10 Cubes paneer/cottage cheese

FOR KATHI ROLL / WRAP:
4 Whole wheat paratha / wrap.(I USED PARATHA)
1 Tsp butter
4 Tsp mayonnaise
4 Tbsp. cabbage (shredded)
4 Tsp cheese and chilly sandwich spread.

INSTRUCTIONS:
Firstly, prepare the margination by mixing all the ingredients listed for paneer tikka and marinate for 1 hour.
Roast the marinated paneer and with oil.
Now prepare the wrap / paratha.
Spread 2 tsp mayonnaise.
Place prepared paneer tikka in one side along with a tbsp. of shredded cabbage. Roll properly and Serve with tomato sauce.

PANEER SANDWICH RECIPE

PREP TIME: 5 MINUTES
COOK TIME: 5-6 MINUTES
TOTAL TIME: 10 MINUTES(approximate)
SERVINGS: 2-3

PANEER SANDWICH RECIPE:
INGREDIENTS:
1 cup paneer/cottage cheese, grated/ cut in small cubes
2 Tbsp. capsicum(red/green/yellow, tomatoes finally chopped
1 Tbsp. coriander finely chopped
2 Tbsp. carrot grated
2 Tbsp. corn boiled
¼ Tsp Kashmiri red chilly powder
¼ Tsp cumin powder
¼ Tsp salt
2 Tbsp. tomato sauce
2 Tsp green chutney
4 Slice brown sandwich bread
2 Tsp butter
INSTRUCTIONS: In a large mixing bowl take 1 cup grated paneer/paneer cubes.
Add 2 tbsp. grated carrot, 2 chopped capsicum, 2 tbsp. boiled corn, chopped tomatoes and 1 tbsp. coriander.
Add ¼ tsp chilly powder, ¼ tsp cumin powder, ¼ tsp salt and 2 tbsp. Tomato sauce.
Mix well making sure all the spices are combined well.
Now spread green chutney over a bread slice.
Now spread 2 tbsp. of prepared paneer stuffing.
Cover again with bread slice spread with green chutney.
Now grill golden or toast on tawa by spreading butter.
Finally, cut in four piece and serve paneer sandwich recipe.
Its a great option for kids lunch box. Healthy and yummy.

PANEER NUGGET RECIPE:

PREP TIME: 20-30 MINUTES
COOK TIME: 15 MINUTES
TOTAL TIME: 35-45 MINUTES
SERVINGS: 3-4

PANEER NUGGET RECIPE:
INGREDIENTS( FOR PANEER MARINATION):
1 Tsp ginger-garlic paste
½ Tsp Kashmiri red chilly powder
½ Tsp pepper, crushed
Salt to taste
2 Tbsp. coriander leaves, finely chopped
1 Tbsp. lemon juice
8 Cubes paneer
OTHER INGREDIENTS(FOR BATTER):
¼ cup corn flour
2 Tbsp. all-purpose flour / refined flour
½ Tsp pepper, crushed
Chopped green onion/coriander leaves.
Salt to taste
½ Cup water, for batter
Oil for deep frying(I USED OLIVE OIL)
INSTRUCTIONS:
Firstly, in a large mixing bowl take 1 tsp ginger-garlic paste, ½ tsp chilly powder, ½ tsp pepper and salt to taste.
Add coriander leaves/ chopped fresh herbs and 1 tbsp. lemon juice. mix well to form paste.
Coat the prepared paste to paneer cubes.
Cover and allow to marinate in refrigerator for 30 minutes.
Prepare batter by mixing, ¼ cup corn flour, 2 tbsp. refined flour, ½ tsp pepper and salt to taste.
add ½ cup water and prepare lump free, flowing consistency batter.
Dip the marinated paneer into batter and coat well.
Deep fry the paneer nuggets in hot oil.
Fry on medium flame, stirring occasionally till it turns golden brown.
Finally, serve crispy paneer nuggets with green chutney or tomato sauce.

Hey lovely lunch box recipes. Paneer nuggets are my kids fav too. Loved the paneer tikka roll recipe.
